A Michelin-starred journey through Mediterranean cuisine
Presenting an exploration of the most exquisite flavors of the Mediterranean, beloved Athens chef Lefteris Lazarou Varoulko seaside– which received the first Michelin star awarded to a chef serving Greek cuisine in 2002 and has held one consecutively since – is opening its second restaurant at the hotel. With Lazarou’s protege Komninos Mouflouzelis at the helm as the new station chief, Varoulko Santorini combines true respect for gastronomic tradition and cutting-edge creativity. The new restaurant, which is now open, offers an all-Mediterranean menu balanced with organic produce, local grains, herbs and spices, but mostly fresh seafood. Chef’s signatures, such as Calamari with Genovese Pesto and Crawfish Tartare with Fresh Basil and Zesty Yuzu, are served with the freshest, highest quality ingredients on the island. Elevating Santorini Island Vibes with Creative Mixology
The hotel’s 363 bar was redesigned by Thanos Prunarus, the founder of Rum baba, which has gained international acclaim as a regular on the World’s 50 Best Bars list and is known as the birthplace of cocktail culture in Athens. Prunarus has curated a cutting-edge new menu, featuring some of the finest spirits from around the world, exclusively for Grace Hotel, Auberge Resorts Collection. The collaboration celebrates the island vibe of Santorini with a focus on rum. Guests can now enjoy unconventional tiki and rum cocktails from Baba Au Rum’s original menu as well as libations designed especially for the hotel. The intimate 20-room property unveils a revamp of the two private bedrooms Villa.
